    1. Boil the unpeeled potatoes in salted water and slice into 5mm-thick slices.<\/span><\/li>\n \t
    2. Cut the Comt\u00e9 into thin slices to make a julienne.<\/span><\/li>\n \t
    3. Do the same with the Granny Smith apples (that will grant a slightly sour touch).<\/span><\/li>\n \t
    4. Then, prepare a lemon jelly:<\/span>\n
        \n \t
      1. 100 g of lemon juice, 10 g of sugar and 1 g of Agar-Agar.<\/span><\/li>\n \t
      2. Boil, cool and mix.<\/span><\/li>\n<\/ol>\n<\/li>\n \t
      3. To serve: place the sliced potatoes on the plate, add some vinaigrette, and then overlap with the Comt\u00e9 and apple julienne. Garnish with sprigs of chives.
